ice cream in North Karelia

  • Finnish first ice cream experiments were performed in beginning of 1900s
  • first ice cream factory in Finland was founded in 1922 Helsinki by italian family the Magi
  • there is known that there was ice cream in 1920s' Kitee and Kesälähti in North Karelia region
    • it was made without machinery
    • first ice cream material was warmed and whisked in enamel bucket or churn
    • then it was put in korvo - two-eared large wooden bucket where there was ice and salt
    • when ice cream started solidify at the edges, solidified ice cream was placed in the middle
  • in 1940s' there developed hand-crocheted ice cream churn (Kesälahti, Tikkala)
